Your quiet-morning pour-over.

A pour-over is a good excuse to stand still for a few minutes. Start here, then adjust to your taste.

What you’ll need

20 g of coffee, 320 g of hot water, a paper filter, your dripper, a mug or server, and a kitchen scale if you have one.

Take it one pour at a time.

  1. Rinse your paper filter with hot water, then discard that water.
  2. Add medium-ground coffee. Gently shake the dripper to level the bed.
  3. Pour about 40 g of water over the grounds. Wait 30–45 seconds while the coffee blooms.
  4. Slowly add the rest of your water in two or three pours. Keep your circles small and gentle.
  5. Let it finish draining, give the coffee a swirl, and enjoy.

Make it yours.

Too sharp? Try a slightly finer grind. Too bitter? Go a little coarser. Change one thing at a time, and trust what you like.
